Deli Meat and Cheese Lunch Salad

Take the components of your favorite deli meat sandwich and make it healthier and more filling by making it a salad! Deli Meat and Cheese Lunch Salad is a very adaptable recipe, so use what you have on hand, and mix and match your favorite meats and cheeses.

Note that this recipe is written for just a single serving. It’s an easy, quick lunch to pack ahead of time for work or for a busy day – go ahead and mix up the dressing, keep it separate from the other ingredients, and mix together when you’re ready to eat!

Notes for Deli Meat and Cheese Salad

  • Ham, turkey, even leftover meats like chicken or beef diced up, can work with this recipe. By no means confine yourself to what I use – this is my fav combo, but experiment or use whatever you have.
  • When you replace higher calorie dense foods (like bread from a sandwich) with lower calorie dense foods like salad greens, you can eat more and feel more satisfied!
  • I use lime juice simply because it’s my favorite – lemon would work just as well. While I usually preach using fresh citrus juices, making this salad day after day for lunch can make bottled citrus juice super convenient. Just don’t tell anyone I told you this!
  • I’ll give you permission to use bottled juice just this time, but promise me you’ll at least grate your own cheese, okay? The flavor difference is huge, and freshly grated cheese will better soak up the dressing, melding the flavors and leading to some delicious bites.
  • I like to chop through my salad greens so I don’t end up with giant, hard-to-eat leaves that will end up slopping dressing all over my face when I eat, but this is optional.
  • Eat Deli Meat and Cheese Lunch Salad with a boiled egg or two for a super nutritious and filling lunch! And don’t forget to season your eggs – I like soy sauce or hot sauce.

Deli Meat and Cheese Salad

Ingredients
  

  • 1 Cup (1 big handful) Salad Greens, washed and chopped
  • 1/4 Cup sliced deli Turkey, chopped
  • 1/4 Cup Monterey Jack Cheese, grated

Dressing

  • 1 teaspoon Mustard (any type will work – I find whole grain to be really tasty)
  • 1 teaspoon Honey
  • 1 teaspoon Lime or Lemon Juice
  • 1 teaspoon Olive Oil
  • Pinch of Salt and Pepper

Instructions
 

  • Make the dressing. Combine your mustard, honey, and lime juice. Slowly drizzle in olive oil while whisking or stirring rapidly with a fork. Season with salt and pepper.
  • When you're ready to eat, mix the greens, ham, and cheese in with the dressing. Toss well to coat evenly. That's it, enjoy!
