Healthy foods get an bad rap – often, we think of boring, floppy lettuce, or raw, bitter veggies, and want none of it. Who could blame us! Quick and Easy Chickpea Dip is hearty, satisfying, and packed with nutrition. This recipe is a great example of how delicious and craveable healthy eating can be. With only 4 ingredients plus seasonings, it’s easy and quick to make, plus we’re not getting the slew of preservatives that store-bought dips contain.

Notes for Quick and Easy Chickpea Dip

If you’re not lazy like me, you can use dried chickpeas that you cook until tender. This is a case where cooking them until a little mushy is actually good so that they blend up easily and get airy, light, creamy, and smooth for us. We will simmer our chickpeas to get them nice and soft for a super smooth, luxurious textured dip. We’ll add some garlic and let it cook just a little bit so it doesn’t overpower, resulting in a garlicky flavor that compliments our finished product.

For seasonings, use what you like! Simple salt and pepper is great and really all you need. Though paprika, cumin, coriander, or oregano also go nicely. Personally, I like to keep it to one or two seasonings to be able to taste them – with too many, a dish can start getting a little swampy and overloaded. However, the beauty of making food yourself is that it’s up to you and your taste preferences.

If you’re looking to reduce salt, you can add more garlic or lemon, and this is a great recipe to play around with spices. One idea is to make a plain batch, then every time you want some, spoon a bit into a bowl and try a new seasoning – find out what you like best!

Chickpea dip is great served with pita or any kind of bread, crackers and veggies, as a side to eat with meat or fish, or even as a substitute for mayo on sandwiches. My personal favorite is at breakfast, slathered on toast.

Quick and Easy Chickpea Dip

Prep Time 5 minutes
Cook Time 10 minutes
Total Time 15 minutes

Ingredients
  

  • 1 15.5 oz can Chickpeas
  • 2 cloves Garlic
  • 2 Tablespoons Lemon Juice, do 3 if you really like Lemon
  • 1/2 cup Olive Oil

Instructions
 

  • Pour can of chickpeas with liquid into a saucepan. Add peeled garlic cloves to the pan. Bring to a boil, then reduce to a simmer for 5-10 minutes.
  • Take pan off heat, cool for a few minutes.
  • Pour chickpeas with garlic and any remaining liquid into a blender. Add in lemon juice and olive oil. Blend until smooth. If you need, add a bit more oil until you have a desired texture, smooth and creamy.
  • Season as desired. See 3rd paragraph of post for some ideas.
  • Great served warm or chilled. Store in refrigerator. Can drizzle some more olive oil and seasoning over when serving if you like. Enjoy!
