Coriander is one of my favorite spices – citrusy, slightly earthy, nutty, and sweet. Coriander Vinaigrette could also be used as a sauce for grilled chicken or fish.
Notes for Coriander Vinaigrette
- When you grind the coriander, take the extra time to grind it down into a fine dust so that you don’t end up with a grainy texture. If you have an electric spice grinder, or a coffee grinder, now is the time to break it out!
Coriander Vinaigrette
Ingredients
- 1 teaspoon Coriander Seeds, whole
- 2 teaspoons Honey
- 2 teaspoons Mustard (any type you have)
- 1 Tablespoon Lime Juice
- 1/4 Cup Canola Oil
Instructions
- Toast your whole coriander in a dry pan over medium-low heat. This will takes just a few minutes – once the spice becomes fragrant, you're done.
- Grind up the coriander. You can use a spice grinder or mortar and pestle – grind into a super-fine powder. We don't want a gritty vinaigrette!
- Add your ground coriander, honey, mustard, and lime juice to a bowl and combine. Slowly drizzle in oil while whisking rapidly.
- Taste and season with salt and pepper.
