Coriander Vinaigrette

Ingredients
  

  • 1 teaspoon Coriander Seeds, whole
  • 2 teaspoons Honey
  • 2 teaspoons Mustard (any type you have)
  • 1 Tablespoon Lime Juice
  • 1/4 Cup Canola Oil

Method
 

  1. Toast your whole coriander in a dry pan over medium-low heat. This will takes just a few minutes - once the spice becomes fragrant, you're done.
  2. Grind up the coriander. You can use a spice grinder or mortar and pestle - grind into a super-fine powder. We don't want a gritty vinaigrette!
  3. Add your ground coriander, honey, mustard, and lime juice to a bowl and combine. Slowly drizzle in oil while whisking rapidly.
  4. Taste and season with salt and pepper.
