Method
- Toast your whole coriander in a dry pan over medium-low heat. This will takes just a few minutes - once the spice becomes fragrant, you're done.
- Grind up the coriander. You can use a spice grinder or mortar and pestle - grind into a super-fine powder. We don't want a gritty vinaigrette!
- Add your ground coriander, honey, mustard, and lime juice to a bowl and combine. Slowly drizzle in oil while whisking rapidly.
- Taste and season with salt and pepper.
