Tropical vibes! Fresh, sweet, fruity, Coconut and Mango Vinaigrette livens up any bowl of greens.
Coconut and Mango Vinaigrette
Ingredients
- 1/2 Mango, ripe (frozen is fine, thaw and use 1 cup, chopped)
- 1/4 Cup Coconut Milk
- 2 Tablespoons Lime Juice
- 1 teaspoon Lime Zest
- 1/4 Cup Cilantro, roughly chopped
- 1 Tablespoon Honey
- 1/3 Cup Canola Oil
Instructions
- Peel mango (if using fresh), chop into rough pieces.
- Add Mango, Coconut Milk, Lime juice and zest, Cilantro, and Honey to blender. Blend until thoroughly pureed.
- Slowly drizzle in oil while blending to emulsify, or add a couple tablespoons at a time in between blending.
- Season with salt and pepper.
