Coconut and Mango Vinaigrette

Ingredients
  

  • 1/2 Mango, ripe (frozen is fine, thaw and use 1 cup, chopped)
  • 1/4 Cup Coconut Milk
  • 2 Tablespoons Lime Juice
  • 1 teaspoon Lime Zest
  • 1/4 Cup Cilantro, roughly chopped
  • 1 Tablespoon Honey
  • 1/3 Cup Canola Oil

Instructions
 

  • Peel mango (if using fresh), chop into rough pieces.
  • Add Mango, Coconut Milk, Lime juice and zest, Cilantro, and Honey to blender. Blend until thoroughly pureed.
  • Slowly drizzle in oil while blending to emulsify, or add a couple tablespoons at a time in between blending.
  • Season with salt and pepper.
