Notes for Hearty Sweet Chili Salad
- Use whatever rice you have on hand! I like brown as it’s more filling and has a more toothsome texture, but leftover white rice also works beautifully.
- Look for Sweet Chili Sauce in the international aisle of your supermarket.
- You could add sliced chicken or shrimp if you’d like to make it into a hearty main course.
Hearty Sweet Chili Salad
Ingredients
- 1 Cup Cabbage, shredded
- 1 Cup Carrot, grated
- 2 Green Onions, sliced (Optional)
- 1 Cup Rice, cooked and chilled
- 1 teaspoon Jalapeño, julienned (Optional)
Sweet Chili Vinaigrette
- 2 Tablespoons Sweet Chili Sauce
- 1 Tablespoon Lime Juice
- 1 Tablespoon Canola Oil
- 1 teaspoon Honey
- Salt and Pepper
Instructions
- Mix the vinaigrette ingredients well in your serving bowl.
- Grate carrots directly into dressing, and stir thoroughly. Grated carrots can start to brown quickly, so coating them in our acidic vinaigrette right away will preserve the bright orange color.
- Mix all ingredients, let sit for 5 minutes so the rice can absorb some of the vinaigrette.
- Garnish with more lime or green onion if you like.
