The name says it all! It’s crunchy, it’s colorful, it takes just minutes to throw together, and everything – literally everything – can be done ahead of time. We use crunchy, hearty veggies like carrots and cabbage for this slaw that can stand up to the dressing without getting soggy. This salad can be prepared a day ahead without losing any texture.
The stereotype of salads being boring and wimpy has a lot to do with texture. If you picture a plain bowl of spinach leaves or iceberg lettuce when you think of a salad, you probably won’t see them as very attractive to eat! Salads, like movies and best friends, need variety and to be dynamic to live up to their potential. Not just in flavor, but texture too – crunchy, creamy, soft, chewy, tender, smooth – all add to a dish. They turn a simple plate of food into something active and lively, maybe even memorable. Crunch and chew are especially important (in my opinion) as they make eating so satisfying. Who doesn’t love the chew of a freshly baked roll, still warm with butter or olive oil slathered over, or biting into a perfectly ripe, crunchy apple? Adding variety can be easy, and in doing so you get to play around with new ingredients! This slaw along with it’s All Purpose Mustard Dressing provides a great canvas for experimenting with texture.
Notes for Simplest Slaw
- Play around with these ingredients as this is a bare bones recipe! Like a little sweet, tart acidity? Add some sliced apple. Looking for more color? Some halved cherry tomatoes would be great. A little fresh strawberry or radish slices – now we’re talking! Your imagination is the limit.
- Use green or purple cabbage, whichever you have on hand or whichever you like more!

- 2 large Carrots, shredded
- 2 Cups Cabbage, shredded
- 1/2 Cup Parsley, roughly chopped
- 1/2 Cup All Purpose Mustard Dressing
